Cinnamon rolls


Cinnamon rolls: yummy flavour packed rolls with beautiful cream cheese icing. My husband's favourites! The house fills up pretty quickly with that lovely cinnamon aroma. I got the recipe from www.bestrecipes.com.au but made some changes in the preparation.

Ingredients:

Dough:
- 1 tablespoon of dry yeast
- 1 cup of warm milk (can be low fat)
- 1/2 cup of caster sugar
- 1/2 cup of melted unsalted butter
- 1/2 teaspoon of salt
- 2 eggs
- 4 cups of sifted plain flour

Filling: 
- 1 cup of brown sugar
- 2 1/2 tablespoons of cinnamon
- 1/3 cup of softened unsalted butter

Icing:
- 120 grams of softened unsalted butter
- 1 1/2 cups of icing sugar
- 1/2 cup of cream cheese
- 1/2 teaspoon of vanilla extract

Preparation:

For the dough:

1- In a medium bowl mix salt, milk and yeast and let it sit for 5 minutes.
2- In a separate big bowl, mix Flour and sugar. Add eggs and melted butter and mix until a crumb consistency.
3- Add milk, salt and yeast  mixture to the flour mixture, mix all the ingredients. Place the dough onto a floured bench and start kneading the dough, at the beginning the dough will be quite wet and sticky, work the dough until soft and elastic, about 10 minutes.
4- Place the dough shaped as a ball in a big bowl (I sprayed the bowl with oil, but that's optional). Cover and let it rest for 1 hour or until the bowl has doubled its size.




For the filling:

1- Beat all the ingredients together with an electric mixer. Place the butter -cinnamon- sugar mixture in a small bowl ready to spread over dough.


Assembling the rolls:

1- Once dough has rested and doubled its size, pinch it and with a rolling pin make a rectangle about 1 cm thick, spread the filling over the dough, roll it and cut the roll into 2 cm rolls, if you want, you can make two smalls rectangle so the cinnamon rolls will be smaller.



2- Place the rolls on a grease baking tray, place them close together. Let the rolls rest covered for 1 hour.


3- Heat the oven to 190C and bake the rolls for 10-15 minutes until brown around the edges.

Icing:

1- While the rolls are baking, beat all the icing ingredients together with an electric mixer. Once the cinnamon rolls are ready, spread the icing while they are still hot.
