Chocolate cold cake (Marquesa de Chocolate)

Apparently I've got sweet tooth this month!! This dessert is a layered cold cake made with Marie biscuits and chocolate pudding, it is perfect for kids parties. This recipe is not part of my mum's repertoire so I used the one I found on http://www.venezuelatuya.com/cocina/marquesa_chocolate.htm

It is really yummy and my quality inspectors loved it!

For a 22.5 x 33 cm tray.

Ingredients:

  • 3 packets of Marie biscuits (easily found in Coles).

  • Milk to get the biscuits wet, about 1 litre.
  • 1 litre of milk for the chocolate pudding.
  • 4 egg yolks, whisked
  • 300 grams of dark chocolate
  • 2 tablespoons of butter.
  • 125 g of caster sugar.
  • 1 teaspoon of vanilla
  • 2 1/2 teaspoons of cornflour, disolved in 2 tablespoons of milk.
Preparation:

1.- Place butter and dark chocolate, in pieces, in a heat proof bowl and melt the chocolate over boiling water (bain marie)

2.- Pour 1 litre of milk in a large saucepan, add sugar and vanilla and heat over low heat, warm it up until feels warm to touch,. Add the egg yolks and stir continuously, be very careful not to over heat the milk otherwise you'll have scramble eggs instead!.

3.- Add melted chocolate to the milk mixture and stir well, then add disolved cornflour and continuously stir until thickened over low heat. Once it is of a thick consistency retire from heat and put it aside.



4.- Pour approx. 1 litre of milk in a large mixing bowl, get the Marie biscuits coated with milk and start assemble the cake. One layer of biscuits, one layer of chocolate pudding. Repeat the process until you have filled up the tray.



5.- Place the cake in the fridge overnight or place it in the freezer for 1 1/2 hours until set.
