Zucchini Slice

Last Christmas at work we did what is called Kris Kringle or better known to some of us as secret Santa, I got from a co worker whom is also a mum, a wonderful recipe book(made by her) with some of her favorite recipes and traditional Aussie snacks, lunches and desserts. I absolutely loved it!!

One of the recipes from that gift, Zucchini slice, has become one of my favorites, it's great for lunch boxes and picnics even as an afternoon snack.




Ingredients:

  • 2 medium sized zucchini, grated
  • 1 cup of cheddar cheese, grated
  • 1/2 onion, grated
  • 1 cup of self - raising flour (wholemeal self raisin flour can be used as well)
  • 1/2 cup vegetable oil
  • 5 eggs, lightly beaten
  • 4 middle bacon rashers, chopped into 1 cm squares
  • 2 tablespoons of dill leaves, chopped
  • Salt and pepper (I'll go easy on the salt, bacon is quite salty) 

Preparation:
  1. Preheat the oven at 180C
  2. Combine all ingredients in a large bowl and stir well
  3. Grease a 20 cm x 30 cm baking dish, I use canola oil spray. Pour the mixture into the dish and spread evenly
  4. Bake in the oven for 45 min, or until golden and firm to the touch
  5. Serve warm or cold.
