Orange cake


This is a family favorite. My husband and girls love it. It's very easy and only a few ingredients. Great for a Sunday arvo =)

Ingredients:

- Rind and juice of 1 orange ( I use navel orange)
- 250 g of unsalted butter
- 1 cup of self raising flour
- 1 cup of caster sugar
- 4 eggs
- sliced almonds, if desired.
- Icing sugar

Preparation:
  • Pre heat the oven 180C/160C fan forced.
  • Beat butter until looks white and creamy. Add sugar.
  • Beat in one egg at a time.
  • Add the rind and the juice of the orange and the sifted flour. Stir.
  • Place the mixture in a greased and flour pan, you can also use baking paper. If desired, place the sliced almonds at the bottom of the pan so when turned over they are at the top.
  • Bake for 40 minutes or until cooked.
  • Once cooled down sprinkle some icing sugar at the top.
Enjoy with some hot chocolate or coffee. If you want to put it in lunch boxes, please don't add the almonds most schools in Australia are nut aware.
