I got this recipe from www.taste.com.au but changed it a little bit. I really though these muffins were delicious. My family loved then and I think it's an easy entrée or late afternoon snack.
Ingredients:
- 90g shaved ham, chopped
- 2/3 cup cheddar cheese, grated
- 3/4 cup whole meal self-raising flour
- 2 to 3 ripe tomatoes, cut in little cubes
- 1 1/2 tablespoon of flat-leaf parsley, chopped
- 1 tablespoon of dill, chopped
- 1/3 cup milk
- 2 tablespoons of canola oil.
- 1 tablespoon of mustard.
- 1 egg, lightly beaten
- salt and pepper
- Pre heat oven at 200C fan forced.
- Place flour, salt and pepper in a bowl and mix well.
- Place all the other ingredients in a big bowl and mix well. Add this mixture to the flour, salt and pepper mixture, stir until just combined.
- Spoon mixture into muffin trays. I used 6 muffin pan, but you can use 12 as well and make smaller muffin.
- Bake for 15 minutes until cooked.
